Apple Pie Breakfast

Super Easy, Super Fast!

This would be a great a recipe for when you have guest in town. It makes the house smell amazing when you wake up.

Apple Pie Slow Cooker Recipe

What you need:
1 cup Steel cut oats
3 gala apples
1 cup of apple sauce
3 cups of water
cinnamon

Directions: put it all in your slow cooker, follow your slower directions, enjoy warm!

Stuffed Peppers

Here's one of my girl night finger foods, they look so colorful and taste great!

Long red peppers, quinoa, balsamic vinger, corn (couldn't find any fresh so I had to use frozen)

This is an easy make a head dish, then place in fridge till ladies arrive :)
1. defrost/rinse corn


2. cut peppers to "boats" to hold stuffing

3. cook quinoa

4. mix with corn
5. fill pepper "boats"
Leave as is or...
6. add any random veggie in your fridge...mine happen to be zucchini 
7. keep chilled till ready to serve

Russet Nugget White Bean Burgers


I found this recipe and just made a few minor switches....the original creator nailed this one on the head!!!! Seriously YUM!




Russet Nugget White Bean Basil Burgers
Serves 4
  • One 14 oz. can white beans (cannelini, white pinto, etc.), drained and rinsed
  • 1/2 lb. russet nuggets, steamed
  • 2 cloves garlic, minced
  • 1 T. nutritional yeast
  • 2 tsp. lemon juice
  • 2 T. whole wheat pastry flour
  • 4 GF buns, split or eat bun less


Here's the visual version:
Beans, nutritional yeast, flour

mush together....if you have a fancy tool for this use it....if not rip off your hand mixer blade and go to town :)

make into patties

Red and Blue Recipe

Here's a four of July inspired treat:
Vegan Blueberry Cherry Oat Bars

They kind of remind me of Starbuck's Crumble Berry cake. What do you think?

I can't take full credit for this recipe I found it here. It was a great idea and I just put my own spin on it.

Vegan Blueberry Cherry Oat Bars
Makes 12 bars

For the bar:

2 cups oat flour
1 cup rolled oats
1 tsp baking soda
1 tsp cinnamon
6 T of light agave
1 large ripe banana
1/4 flax oil
1/4 almond milk
1 tsp vanilla

For the topping:

1/3 cup fresh blue berries
1/2 cup of cherry jam (I used my Door County, WI stash :)
3 T rolled oats
3 T natural sugar

1. Preheat oven to 350
2. Mix all dry  ingredients in food processor then add wet.
3. Spread in 8x8 dish
4. In food processor add topping ingredients and spread over first layer
5. Bake for 35-40 minutes
6. Cool and cut.

Granola

Inspiration: Natures Path  Organic Granola
This stuff is amazing!!!

Here's my way to re-create it!




INGREDIENTS

  • 3 cups oats
  • ½ cup flax seeds
  • ¾ cup sunflower seeds
  • 1 tablespoon pumpkin pie spice
  • ¾ cup maple syrup/light agave

METHOD

1.Preheat oven to 350 degrees, gather ingredients

2.Put all dry ingredients in bowl then pour sweetener over dry ingredients and mix well

3.Spread on cookie sheet

4.Put in oven for 20 minutes, done when brown
5.Jar and keep in fridge
